Who’s ready for another set of quarantine recipes? Today we will learn how to make Stuffed Bell Peppers and Tomato-Avocado Salad with Bread. Lets get started!

Ingredients and Equipment –

· 1/2 Cup Uncooked Rice

· 2 TBSP Olive Oil, plus more for drizzling

· 1 Medium Onion, chopped

· 1 TBSP Tomato Paste

· 3 Cloves Garlic, minced

· 1 lb Ground Beef (other ground meat or tofu can substitute)

· 1 (14.5-oz.) Can diced Tomatoes

· 1 TSP Dried Oregano

· Kosher salt

· Black Pepper

· 6 Bell Peppers, tops and cores removed

· 1 Cup Shredded Monterey jack

· Freshly Chopped Parsley (Optional)

· 1 Large Skillet

· 1 Large Baking Dish

Instructions –

  1. Preheat oven to 400°. In a small saucepan, prepare rice according to package instructions. In a large skillet over medium heat, heat oil. Cook onion until soft, about 5 minutes. Stir in tomato paste and garlic and cook until fragrant, about 1 minute more. Add ground beef and cook, breaking up meat with a wooden spoon, until no longer pink, 6 minutes. Drain fat.
  2. Return beef mixture to skillet, then stir in cooked rice and diced tomatoes. Season with oregano, salt, and pepper. Let simmer until liquid has reduced slightly, about 5 minutes.
  3. Place peppers cut side-up in a 9″-x-13″ baking dish and drizzle with oil. Spoon beef mixture into each pepper and top with Monterey jack, then cover baking dish with foil.
  4. Bake until peppers are tender, about 35 minutes. Uncover and bake until cheese is bubbly, 10 minutes more.
  5. Garnish with parsley before serving.

Easy to make and full of flavor, this meal is filling and you’ll have plenty of leftovers.

Tomato-Avocado Salad with Bread:

Ingredients and Equipment –

· 1 Pint Cherry Tomatoes

· 2-3 Large, Ripe Avocados

· ¼ Cup Basil, chopped

· ¼ Cup Olive Oil, extra to drizzle

· 2 TSP Lime Juice

· Salt & Pepper, to taste

· 1 Loaf French Bread

· 1 Large Bowl

· 1 Baking Sheet

Instructions –

  1. Preheat oven to 400˚.
  2. Slice French bread on an angle, between ½ and ¾ inch thick.
  3. Sprinkle with olive oil, salt, pepper and bake for 10 minutes or until lightly toasted.
  4. Slice tomatoes in half, dice avocado into ½ inch cubes, and chop basil. Place ingredients in a large bowl.
  5. Poor olive oil and lime juice over ingredients, season with salt & pepper, and fold together gently.

Serve salad with warm toasted bread. This is a fast, fresh, and delicious meal for any time of day. Can stand alone or be served as a side.
